Please be advised that Dumas Bay Centre’s food service operates on a buffet-style basis. In order to ensure a seamless and enjoyable dining experience for all guests, we have specific minimum order requirements for menu items.
A $25 service fee per meal will be added to all orders.
Wrap Orders:
- For all wrap varieties, there is a minimum order requirement of 5 wraps per type.
- However, for the tofu wrap, we can accommodate lower quantities upon request to accommodate dietary restrictions and needs. Please feel free to discuss your specific requirements with our team.
Other Entrées, Soups, and Snacks:
- For all other entrées, soups, and snacks on our menu, there is a minimum order requirement of 12 items per selection.

Turkey Pepper Jack—Oven roasted turkey, pepper jack cheese, green leaf lettuce, sweet peppers and dijonaise wrapped in a flour tortilla
Chicken Caesar—Tender seasoned chicken, romaine, parmesan, tomato, and classic Caesar dressing wrapped in a flour tortilla
East Asian Chicken—Marinated and grilled chicken, red and white cabbage, shredded carrots and house-made with Thai mayo wrapped in a flour tortilla
Vegan Tofu—Marinated and roasted tofu, red peppers, zucchini, red cabbage, grilled vegetables and house-made with Thai “mayo” wrapped in a flour tortilla

Roasted Autumn Vegetable and Pearl Barley—A comforting medley of seasonal vegetables and barley in a hearty, flavorful broth
Buddha Bowl – $19.95
Choice of chicken or tofu. Packed with fresh bites of mixed greens, brown rice, edamame beans, chickpeas, carrots, steamed broccoli, red cabbage, a sprinkle of green onions, served with a delicious sesame ginger dressing.
Taco Bar – $24.95
Choice of pork carnitas OR grilled chicken. Served with flour and corn tortillas, lettuce, salsa Verde, grated cheese, sour cream, Pico de Gallo, rice and beans.

Monday
Teriyaki Chicken
Marinated and grilled chicken served with jasmine rice and roasted broccoli.
Tuesday
Chicken Tikka Masala
A classic curried dish with tender chunks of char-grilled chicken simmered in a delicious sauce. Served with cardamom basmati rice and mango chutney.
Wednesday
Pulled Pork Sandwich
Tender pork shoulder with Memphis-style BBQ sauce on a toasted bun. Served with creamy coleslaw and potato salad.
Thursday
Jambalaya
Traditional New Orleans Creole dish with chicken and andouille sausage. Served with fresh rolls and a side salad.
Friday
Thai Red Curry
Traditional Thai curry with chicken, jasmine rice, vegetables, basil, and coconut milk.
Saturday
Kung Pao Chicken
Chicken breast stir-fried with broccoli, carrots, sweet peppers, and cashews, tossed with hoisin, soy, and oyster sauce. Served with steamed rice.
Sunday
Pasta Rigatoni
Choice of Bolognese, alfredo, or marinara. Served with Caesar salad. Extra sauce available for $2.00 per person.
Roll – $1.00

Braised Rosemary Pork Medallions
Served in a white wine and tomato broth with garlic orzo and roasted garden vegetables.
Tuesday
Beef Birria
Tender shredded beef braised in salsa enchilada roja and fragrant spices. Served with Mexican rice, flour and corn tortillas, crema Mexicana, and roasted corn and tomato salsa.
Wednesday
Chicken Puttanesca
Tender chicken thighs braised with sun-dried tomatoes, capers, olives, garlic, chili flakes, and Italian parsley. Served with roasted vegetables and garlic orzo.
Thursday
Chicken Tagine
Slow-simmered thighs with apricot, olives, sweet peppers and preserved lemons. Served with saffron rice.
Friday
Baked Ziti
Roasted tomato, grilled zucchini, sweet peppers, fresh basil, baked ricotta, and mozzarella. Served with your choice of Italian sausage or herb-crusted grilled chicken, and a classic Caesar salad with herbed croutons.
Saturday
Cassoulet
A hearty French stew with braised chicken thighs, boudin blanc sausage, tender white beans, and sautéed root vegetables. Accompanied by a mixed green salad.
Sunday
Korean Dinner
Marinated bulgogi beef, grilled chicken, jasmine rice, vegetable stir fry with teriyaki sauce and mamma sauce.

Roll – $1.00
All menu items are served à la carte, unless otherwise noted. WA State sales tax will be added to all orders. A $25 service fee per meal will be added to all orders.
